Hank Snow did a tune I liked as a kid called "Rhumba Boogie".

My old band used to do the Bobby King/Terry Edwards/Ry Cooder arrangement
of "Just a Little Bit." I don't know if this is a rhumba, exactly, but it
might have the feel you're looking for. Check out the sound clip here from
their album (first one in the list):

It's a lot of fun to play, but I don't know how well it would translate to
a solo act.

I don't know about Rumbas but these are some songs I have on my list that at
least have different rhythms for blues songs:

Shake it for Me - Howlin' Wolf
Who's Been Talking -Howlin' Wolf
300 Pounds - Howlin' Wolf
La Juanda - Chuck Berry (not blues at all, but I love playing this song)
Can't Stop Lovin' - Elmore James
One Way Out - Sonny Boy Williamson (Not the Allman Brothers version)

I know there are a lot more, especially with Wolf and Elmore.

You might want to look toward New Orleans music too.
